Seydadiyat Samak

A very popular dish in Indonesia and Malaysia.The rice and fish are cooked separately and arranged in layers. Although spiced up with condiments and lemon juice, the fish flavour dominates this dish.



Ingredients:


4 hammour fillets or seer fish fillet
50ml olive oil
250 ml fish stock
5 gms black pepper
5 gms cumin powder
5 gms cinnamon powder
salt to taste
250gms rice
250gms onion sliced and pan fried
50 gms roasted pine nuts
5ml lemon juice
10gms butter
10gms flour



Preparation:


  1. Heat oil in a deep frying pan and pan-fry fish fillet on both sides.
  2. Pour fish stock over and sprinkle all the spices.
  3. Add onion and simmer until fish is cooked
  4. Remove the fish from the pan and keep it aside
  5. Strain and reserve the juice from the pan
  6. In a separate pan,melt butter and roast flour over low heat till slightly brown
  7. Add 100 ml of the reserved cooking juice to make a brown roux
  8. Boil rice and remaining cooking juice together till the rice is done
  9. If required, add water to cook the rice
  10. Add lemon juice and adjust seasoning
  11. Serve fish on the rice.
  12. Garnish with nuts and serve hot.

Lobster Biryani

A popular recipe of Sri Lanka and south India

Unique delicious one of a kind  Lobster Biryani

Ingredients:

60 ml oil
2 Onions chopped
1 litre water
1/2 cup coconut milk
500gm basmati rice
4 lobster shelled and deveined
2 tsp chopped tomato
2 tsp coriander powder
1/2 tsp chilli powder
1/2 tsp black pepper powder
salt to taste
50 gms ginger -garlic paste
Coriander leaves for garnishing




Preparation:


  1. Heat oil in a heavy bottom pan
  2. Add onion and saute till transparent.
  3. Add tomato , ginger - garlic paste, coriander , red chilli and black pepper powders
  4. Saute for a while and then add water, coconut milk, lobster and rice
  5. Cook for 15-20 mins on high flame
  6. When the rice is parboiled spoon the mixture and transfer to a container.
  7. Seal it and cook in a pre heated oven for 20 mins or till the rice is cooked.
  8. Garnish with coriander leaves
  9. Serve hot

Salmon Tikka



Ingredients:

  • 2 kg fresh salmon cubes
  • 10gm caraway seeds
  • 5gm turmeric powder
  • 20gm ginger-garlic paste
  • 10gm pepper powder
  • 1/2 kg yoghurt
  • 30gm oil
  • 100gm lime juice
  • salt to taste



Preparation:

Mix salmon cubes with ginger garlic paste, salt, turmeric powder and white pepper.

Squeeze some lemon juice and sprinkle some caraway seeds on salmon cubes. Leave it aside for 20 -25 minutes

Take thick yogurt in a steel bowl and heat thoroughly. Mix some oil in it.

Pour the yogurt on fish and mix gently as salmon is very delicate fish. Leave for 2 hours.

carefully thread the fish (around 7-8 pieces on each skewer) and cook over the glowing coals, turning once or twice

Serve hot with tomato-garlic chutney

Prawn Ballaoucha



Ingredients:

  • 800gm prawns


For paste:
  • 50gm red chilli whole seedless
  • 25gm cloves
  • 20gm jeera
  • 15gm mustard seeds
  • 25gm ginger
  • 20gm garlic
  • 20gm onion chopped
  • 50ml vinegar

For gravy:
  • 25ml oil
  • 10gm garlic finely chopped
  • 100gm tomato puree
  • salt to taste
  • onion chopped
  • 5gm coriander leaves chopped



Preparation:

Clean and wash the prawns and keep aside. Make a paste of the above mentioned ingredients 2-9 in a mixie/grinder. Marinate the prawns with this mixture and keep it for 2 hours at room temperature.

Heat a pan , add oil and garlic and also add onions and cook for 2 minutes. Add the prawns and cook further for 10 minutes.

When the prawns are 3/4 cooked, add tomato puree and salt and cook further for 5 minutes.

Serve hot garnished with chopped coriander leaves.

Prawns Pattar Pani


Ingredients:

  • 800 gm Prawns
  • 1/2 tsp salt
  • 15 ml lemon juice
  • 1 tbsp ginger-garlic paste in the ratio of 1:2
  • 1/2 tsp red chilli paste

For Sauce:
  • 1 medium-sized onion
  • 4 tomatoes
  • 2 tbsp tomato puree
  • 1 tsp garlic finely chopped
  • 1/2 tsp green chilli finely chopped
  • 2 tsp coriander leaves chopped
  • salt and pepper to taste
  • a pinch of clove powder



Preparation:

To prepare prawn:
Clean the prawns, rub with salt and leave for 10 minutes.Squeeze out moisture, add lemon juice, ginger-garlic paste and red chilli paste. Keep aside for 4-5 hours.


To prepare sauce:
Blanch the tomatoes in boiling water, remove skin and seeds and chop finely. Heat oil in a pan and slightly fry onions and garlic and add rest of the ingredients and simmer for 20 minutes. Now grill the prawns on a griller in medium temperature, arrange in a sigri and top with the prepared sauce.

Machli Lazeez



Ingredients:

  • 6 Bekti fish or any type of fish fillets
  • 300 gm spinach leaves
  • salt to taste
  • 1 tbsp white pepper
  • 2 onion chopped
  • 1 tbsp garlic chopped
  • 1 tbsp lemon juice
  • 200 gm plain flour
  • 200 gm oil for cooking
  • 50 gm butter




Preparation:


Marinate fish fillets with lemon juice, white pepper, salt and oil. Dust with plain flour.

Grill the fish on both sides on a hot plate till its well done.

Boil the spinach and then chop it.

Heat the butter in a pan, add chopped garlic and onion and saute spinach.

Spread on a dish. Arrange fish on it and serve with tartar sauce.

Tandoori Fish Tikka



Ingredients:


  • 1 Kg fish (centre bone and skin removed and cut into square pieces)
  • 1 lemon juice
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1/2 cup drained beaten curd
  • salt to taste
  • 1 tsp chilli powder
  • 1/4 to 1/2 tsp crushed ajwain
  • 1 tsp garam masala
  • a pinch of tandoori colour(optional)


Preparation:

Rub the fish with lemon juice, garlic, ginger paste and leave for 1/2 an hour.

Mix and smear the fish tikka with 1 tsp salt, chilli powder, ajwain, garam masala, tandoori colour and add 2 tbsp oil.

Arrange the fish tikka on a greased skewer and barbecue on a charcoal fire or cook under the grill.

Sprinkle hot masala just before serving (optional)

Serve it hot with onion rings or salad.

  • About 1 ¼ tsp. salt
  • ½ tsp. ground turmeric
  • 1 lb (450g) fish steaks or fillets, cut into 2 inch cubes
  • 4 Tbs. coconut oil or vegetable oil
  • 1 medium large red onion finely sliced
  • 6 fresh hot green chilies finely sliced
  • 1 inch piece of fresh ginger, peeled and finely shredded
  • About 30 fresh curry leaves, if available
  • 7 fl oz (1 cup) coconut milk, well stirred from a can or fresh
  • 2 Tbs. lime juice




Procedure



Mix ¼ teaspoon of the salt and ¼ teaspoon of the turmeric together.
Rub over the fish. Set aside.
Heat the oil in a large wide, non-stick pan or wok over a medium heat.
When hot add the onion, chilies and ginger. Stir once or twice.
Add the curry leaves.
Stir and fry for three to four minutes until the onion is soft.
Add ¼ teaspoon turmeric powder and 5 fl oz (3/4 cup) water. Mix well.
When the mixture boils add the fish.
Spoon the sauce over the fish. Add 3/4 teaspoon salt. Turn the heat down.
Cover and simmer for four to five minutes, spooning the sauce over the fish and shaking the pan gently to prevent sticking.
Add the coconut milk, shake pan and add more salt if needed. Cover and simmer for a further three to four minutes, shaking the pan occasionally.
Add the lime juice. Shake again and remove from the heat, then serve.






Alternate Recipe








Ingredients:




  • 12 fillets of pomfret or red snapper
  • 2 tbs (30 ml) coconut oil
  • 1 tsp (5 g) mustard seeds
  • 8 flakes (16 g) garlic, chopped fine
  • 2.5 cm ginger, julienne
  • 6 green chillies, slit lengthwise, deseeded and julienne
  • 150 g onions, sliced into rings
  • salt to taste
  • 24 curry leaves
  • 3 (225 g) tomatoes, cut into 8 slices each
  • 1/2 tsp (2 g) turmeric powder
  • 1/2 cup (120 ml) coconut milk (third extract)
  • 3/4 cup (180 ml) coconut milk (second extract)
  • 3/4 cup (180 ml) coconut milk (first extract)
  • 1 tbs (15 ml) lemon juice


Method:



Heat oil in a pan and season with mustard seeds. Stir over medium heat until they begin to splutter. Add garlic and ginger and stir for a minute.

Add green chillies and stir lightly. Add the onions and sauté until translucent and glossy. Add turmeric powder and stir well.

Add fish and the third extract of coconut milk. Bring it to a boil. Lower the heat and simmer, turning carefully once, for three minutes. Add salt and stir well.

Add curry leaves, tomatoes and the second extract. Cover and simmer for three minutes.

Remove the pan from heat and gently (to make sure that the fillets do not break) stir-in the first extract of coconut milk. Return the pan to heat and bring to a boil over low heat.

Sprinkle lemon juice and stir carefully.

Remove from heat and adjust the seasoning Remove to a bowl and serve with steamed rice.

Did you know Mahanadi Mahseer (Tor mosal Mahanadicus) is the state fish of Odisha. Local residents of Huma and Maneswar near Sambalpur on the banks of the Mahanadi refer to the mahasheer as kado. The village, otherwise popular for its Humma temple is a renowned historical monument, is situated on the bank of the river Mahanadi, about 40 km from Sambalpur city has become a destination for environmentalist for its conservation of Mahashir : a fish typical to the Mahanadi that flows by the temple. This place is reverence of kado or mahaseer fish as an incarnation of Lord Vishnu in his Matsya avatar. In an ancient folk tale, a fisherman’s wife was turned into stone while cutting a kado. A monument on an island opposite the Huma temple has statues of the fisherman and his wife. “Mahasheer” in Odia means big (maha) head (sheer).With the help of its temple committee, therefore, the villagers have made it mandatory for fishermen to fish all other species, but not the Kado. The most important role played in conservation is that of the fisher folk in the village who do not fish Mahashir, despite its commercial importance. “Even if a Kado gets caught in the net, we release it back to the river. Catching or hurting these fish is a sin,” said a fisherman.

The best season for sighting kado fish is between the winters around November, after Kartik Poornima and till the beginning of the monsoon in June. This is the time when the water is clear and quiet. This is a trout species confined to rocky upstream portions of the river.
