Goat Cheese peppered Salad

Goat cheese also called chevre, is made from the milk of goats. Goat cheese comes in a wide variety of forms, although the most common is a soft, easily spread cheese. These cheese are quite common in the Middle East, Africa, and some Mediterranean countries.Goat cheese is distinctive due to the tangy flavor of goat milk but some customer dislike it. This recipe serves two and comes from executive chef of Crown plaza.


Ingredients

For the Cheese:

  • 65g goat cheese
  • 10g mixed peppercorn, crushed
  • 5ml olive oil
  • 10g parsley finely chopped
  • 5ml honey



For the salad

  • 50g sweetcorn roasted in butter
  • 10g scallion, finely sliced
  • 15g sun dried tomato, sliced into small pieces
  • 15g pimento peppers, chopped
  • 2g vanilla bean scraped
  • 5g coriander chopped
  • 5ml lime juice
  • 5ml olive oil
  • salt and pepper to season
  • mache or mixed lettuce




Method

  • Lay some clingfilm on a board and sprinkle with mixed peppercorns, olive oil, honey and parsley
  • Place the goat cheese on this and roll the clingfilm up tightly.
  • Allow to infuse overnight
  • Add all the salad ingredients together ,dress with lime juice and olive oil and season to taste
  • Place in a dish and add lettuce with goat cheese slices on top.
  • Serve and enjoy

Sprouts Salad

Ingredients

1½ cups bean sprouts (washed and drained)
1½ cups cucumber, peeled and cut into thin strips
½ cup spring onions, diced
For the garnish
3 tablespoons roasted peanuts
To be mixed into a dressing
2 tablespoons lemon juice
1 tablespoon castor sugar
2 tablespoons olive oil
½ teaspoon mustard powder
salt and pepper to taste



For the dressing
1. Shake the ingredients thoroughly in a closed bottle.
2. Chill and use as required.

How to proceed

  •  Combine the bean sprouts, cucumber and spring onions in a bowl and chill.
  •  Just before serving, add the dressing as required and toss.
  •  Serve immediately, garnished with roasted peanuts.
